My husband’s favorite cookie is Monster Cookies made with lots of peanut butter so we make them more then we should. This weekend we made a batch and wanted to get creative with a variety of ways to use this Monster Cookie dough. Today I am giving you the recipe that I have modified over the last few months. I found the original recipe online and decided to make a lot of changes to it. So this is my version of the Monster Cookie. I will also provide the way we got creative; Monster Cookie Ice Cream Sandwich and Monster Cookie Brownie Cups.

Monster Cookie Recipe

Prep Time: 15-20 Minutes

Cook time: 16 Minutes

Makes: about 24 cookies

Ingredients

Ingredients:

1 jar (16 oz) peanut butter

½ cup room temperature butter

1 ½ cups brown sugar

½ cup sugar

3 eggs

1 tsp vanilla

5 cups old fashioned oats

2 teaspoons of baking soda

I cup milk chocolate chips

½ cup M&Ms

Directions

Step 1. Preheat oven to 350 degrees

Step 2. Line cookie sheet with parchment paper

Step 3. In a large bowl combine peanut butter, butter, brown sugar and sugar. Mix until smooth.

Step 4. Add the eggs and vanilla. Mix until smooth

Step 5. Add the oats and baking soda. Mix it well and evenly.

Step 6. Mix in the chocolate chips and M&Ms. About ½ cup at a time is easier.

Step 7. Use a 1/8 measuring cup to portion the balls of dough. Roll between palms to make smooth.

Step 8. Place 9 cookies on one sheet to allow them room to spread.  (picture shows 6 but I moved to a larger pan and was able to get 9 on there:))

Step 9. Bake for 9 minutes then press them down slightly using a fork and bake for another 5 minutes.

Step 10. Let cool on cookie sheet for 2 minutes then transfer to a cookie rack to cool completely.

The 2 other creative ways we used the Monster Cookie dough was for Ice Cream Sandwiches and Monster Cookie Brownie Cups.

The Ice Cream Sandwiches were so delicious! All you do is add ice cream to your cookie once they are done baking and cooling. I really enjoyed eating the ice cream on a warm cookie but it was messier because the ice cream melted quicker.

The Monster Cookie Brownie Cups were by far our favorite way to use the Monster Cookie dough! We made brownie mix from scratch but you can use a box mix for brownies if you prefer. The brownie recipe we used will be at the very bottom of this post.

Monster Cookie Brownie Cups

Indegrients:

Monster Cookie Dough

Brownie Mix already made (your choice)

Directions:

Step 1. Preheat oven to 300 degrees

Step 2. Place cupcake liners in the pan

Step 3. Place a 1/8 cup of cookie dough into the cupcake liners and press it down so it evenly fills the bottom of the cup.

Place 1/8 cup of cookie

Step 4. Pour in the brownie batter on top of the cookie until the cupcake liner is almost full. (Brownies do not rise like cake so it can be fuller than a regular cupcake).

Pour the batter over the cookie

Step 5. Bake for 45 minutes

Ingredients

4 Large Eggs

8 oz Melted Butter

1 ¼ Cocoa

1 cup Sugar

1 cup Brown Sugar

½ Flour

1 tsp Vanilla Extract

½ tsp salt

Directions:

Step 1. Preheat oven to 300 degrees

Step 2. Grease pan or cupcake liners

Step 3. Whisk eggs until fluffy and light yellow in color.

Step 4. Stir in brown sugar and sugar until smooth

Step 5. Blend in butter, cocoa, flour, vanilla and salt until you have a smooth mix

Step 6. Place batter into greased pan or cupcake liners

Step 7. Cook for 50 minutes in larger pan and 45 minutes for cupcakes. Check the batter with a toothpick to make sure it is done before serving.

Step 8. ENJOY

Sherbet with a Twist

Place 2 Scoops of orange sherbet ice cream into the wine glasses.

Now pour the Korbel champagne over the ice cream and let the magic happen! 🙂 I like to let it sit for about 5 minutes before I drink it so the ice cream and the champagne can mix.

Hey Everyone! I hope you’re having a fantastic week! 🙂 Do you love pizza? Hah, do I even have to ask? I’ve never met someone that didn’t enjoy pizza every once in a while!! In college I had pizza at least 2-3 times a week. This recipe was my favorite way to make pizza at home, because the crust is already made and it’s delicious! Making a good pizza crust has always been a challenge for me so I started making my pizza on french bread and the result is so yummy! Using bread also cuts the work and time in half! EverythingKaysi’s Delicious BBQ Chicken Pizza is quick and easy to make and I can’t wait for you to try it!

BBQ Chicken Pizza

This recipe makes (4) 6-7 inch pizzas (depending on the size of the loaf).

Ingredients:

One Loaf of French Bread

One 8 oz package of Mozzarella Cheese

One 8oz package of Parmesan Cheese

1/2 lbs of chicken- cut into one inch pieces

Your choice of BBQ sauce

1 cup of chopped white onion

1 tsp of olive oil

Step 1:Preheat oven to 400 degrees.

Step 2: Cut chicken into one inch pieces. Put one tsp. of olive oil in a skillet and sauté the chicken.

Step 3: Once the chicken is cooked, add BBQ sauce to coat the chicken.

Step 4: Cut the loaf of bread in half. Then slice it down the middle, so you have 2 open halves.

Step 5: Spread BBQ on the top of the bread slices.

Step 6: Add the BBQ coated chicken onto the bread.

Step 7: Add onions and cheese.

Step 8: Bake at 400 degrees for 5-7 minutes or until bread starts to brown and the cheese is melted.

Cornbread Salad for a perfect Thanksgiving side dish

My mom makes this great cornbread salad for Thanksgiving and Christmas each year and it is a huge hit with my family! Its so colorful and super easy to make! So I am going to give it a try! I hope you enjoy.

Cornbread salad- Perfect side dish for Thanksgiving

Ingredients:

2- packages of yellow cornbread mix and the ingredients for the mix you choose

1- 8oz bottle of Ranch Dressing

1- 14.4oz can of Ranch Style Beans or Pinto Beans

1- 16oz can of Whole Kernel Corn

1- small Green Bell Pepper

1- small Sweet Onion

1- ripe Tomato

2- cups of shredded Cheddar Cheese

 

Step One: Make the cornbread based on the instructions on the package.

Step Two: Once the cornbread is totally cool, cut it into bite size cubes or 1 inch cubes.

Step Three: Place Cornbread into the bottom of a Trifle Bowl. Try to place it evenly around the bowl. I used about 75-80% of the cornbread because I didn’t want the layer to be too large.

Step Four: Drain and rinse the ranch style beans and place on the cornbread.

Step Five: Drain the corn and place it on the beans.

Step Six: Finely chop the bell pepper and place it on top of the corn.

Step Seven: Finely chop the onions and place it on the bell pepper.

Step Eight: Chop the tomato and place it over the onions.

Step Nine: Sprinkle the cheddar cheese on top of the onions.

Step Ten: Evenly pour the ranch dressing over the top.

Step Eleven: Cover bowl and place it in the fridge for several hours before serving.

I don’t like to brag, but my pasta tonight was on point! You can’t go wrong with pasta, steak and cheesy sauce! Let me walk you through how I made it!

Ingredients:

1.1 pound-Beef sirloin steak from Albertson that was already seasoned- you can buy regular sirloin and season it yourself. I recommend using salt, pepper and garlic salt.

2.1 box- Rigatoni pasta

3.1 jar-Bertolli 4 cheese Alfredo sauce

4.2 TBSP-olive oil or vegetable oi

I start by turning on my cast iron skillet to make sure it’s nice and hot before I put my steak on. I also put water in my pot to start boiling. I then cut the steak into one-inch squares with my kitchen scissors.

I then put the sauce in the skillet. I turn the sauce on low heat. Once the water is boiling, I put the pasta in. Next, I put a small about of olive oil in the cast iron skillet and my steaks are ready to be placed. I cook each side for only 3 minutes; so make sure you set a timer! (add more time if you don’t want it pink in the middle).

Once your steaks are done, put them in the sauce to simmer while the pasta gets done cooking.

Next drain the pasta and add the sauce and the steak to it!

I like to add Parmesan or mozzarella cheese on top! My husband adds pepper flakes for spice. Add for your liking.

Homemade Oatmeal Cookies

This is my favorite oatmeal recipe that was passed down to me from my grandma when I was a little girl. I entered 4-H food competitions with this recipe and did pretty well!

It’s a simple recipe that the whole family will enjoy! I like mine plain, my husband likes his with chocolate chips and my Papa likes his with raisins. I’ve also added pecans, walnuts or M&Ms in the past.

First, preheat the oven to 350 degrees. In a large mixing bowl, mix 1 cup of sugar, 1cup of brown sugar and 1 cup of shortening.

Next, add in 2 eggs and 1tsp of vanilla.

IMG_8366Now sift the 1.5 cup of flour into the bowl and add 1 tsp of baking soda and ½ tsp of salt.

Add dry ingredients to creamed mixture. Pour in about half a cup at a time. Next, you will fold in 3 cups of oats.

IMG_8371If you like your oatmeal cookies plain then you can skip this next step! Add-ins will be added last. Today I added 1 cup of chocolate chips, at my husband’s request. Like I said before, pecans, walnuts, raisins, M&Ms or chocolate chips can all be added. I add about 1 cup to 1.5 cups.

Your dough is now ready! This is what mine looks like… YUMMY

Spoon dough onto a cookie sheet about 1-1.5 inches apart.

And cook for 10-12 minutes or until golden brown!

I place mine on a cookie rack for about 5 minutes before serving.

Pre-time: 15 minutes

Cook time: 10-12 minutes

Ingredients:

1 cup sugar

1 cup brown sugar

1 cup shortening

2 eggs

1 tsp vanilla

1 ½ c flour

1 tsp baking soda

½ tsp salt

3 cup oats- instant

*optional- 1 cup chocolate chips, pecans or raisins

Step 1: Preheat oven to 350 degrees

Step 2: In a large mixing bowl, mix sugar, brown sugar and shortening until creamy.

Step 3: Add in eggs and vanilla

Step 4: In another medium size mixing bowl, sift flour and add in baking soda and salt.

Step 5: Add dry mix to creamed mixture, ½ cup at a time.

Step 6: Fold in oats, 1 cup at a time

Step 7: Add chocolate chips or pecans

Step 8: Spray cookie sheet with Pam or line cookie sheet with foil

Step 9: Spoon dough onto cookie sheet, about 1-1 ½ apart.

Step 10: Bake for 10-12 minutes or until golden brown.
